These things are very pantry friendly in that their ingredients last quite a while in there. This is a good recipe to keep in your back pocket.
1/2 cup peanut butter
1/2 cup honey
1/2 tsp cinnamon
1/4 tsp salt
2 1/4 c. oats
1/4 c. dried cranberries, or other chopped dried fruit if you don’t have cranberries
1/2 to 2/3 c. chocolate chips or chopped chocolate bars
Optional: 1/4 c. shredded unsweetened coconut
Optional: 1/4 c. sunflower seeds
Preheat the oven to 350 F. Mix the peanut butter, honey, and cinnamon very well, then gradually add the oats, stirring well. After the oats are all incorporated, mix in the cranberries and other ingredients. Grease a baking pan with a little sunflower oil or butter, then spread the mixture into the pan. If all you have is a rimmed cookie sheet, use that instead. Mound up the mixture so that it’s 1″ tall; the other dimensions don’t matter. Bake for 20 minutes.
